Ndole and plantains or cocoyam, white yam, etc.

Recipe

  • Ndole and plantains or cocoyam or white yam etc.

Serve

  • 6 people

Ingredients

  • 2 kg Bitter leafs

  • 1 teaspoon garlic

  • 1 teaspoon ginger

  • ½ kg of crayfish

  • 1kg of beef flesh or dries

  • 12 fingers of plantains

  • 1 large onion

  • 1 tablespoon salt

  • ¼ kg of groundnut (peanut)

  • 1 teaspoon leim stone( akagwa) or bicarbonate

  • 3 cubes of maggi(vegetable stock)

  • ¼ liter of groundnut oil

Preparation of bitter leafs

  • Slice the bitter leafs in a very small small quantities.

  • Stand a pot in the fire and put three liters of water.

  • When the water boil, put the akagwa in the water also with the bitter leafs and stir it for five minutes and remove and drainer out the water immediately and add cold water in it.

  • Put it inside a clean bag and be pressing it and adding water and pressing it until you taste and hear that it is not bitter.

  • Soak the groundnut inside the water for thirty or thirty five minutes and remove and peal it with your hands one by one.

  • Ground the groundnut and mix it with a small cup of water

  • Boil the meat for two hour and slice it any how you like.

  • Slice the onion and ground the ginger, garlic and also put the crayfish in a paper and wrap and pres it for the small bones to scatter.

  • Stand a new pot in the fire and add groundnut oil (peanut oil).

  • When the water is hot, add salt the spices and stir it for ten minutes and add groundnut and stir it for twenty minutes.

  • After, add crayfish and beef and bitter leaf and stir for five minutes and cover it for twenty minutes and remove the pot.

Preparation of plantains

  • Clean the cocoyam and peel the plantains and wash it and put it in a new pot.
  • Add three liters of water and stand it in the fire and let it stay for one hour and you remove the pot.
